If you are looking for a delightful snack to bring to parties and potlucks here is a treat that is both Vegan and delicious.
Start by mixing decicated coconut with coconut milk cream to make the filling.
You may also add a drop or two of stevia, vanilla or peppermint essential oil for variations on flavours.
You can also make a toffee filling using peanut butter and coconut milk cream and alternate the two fillings for that element of suprise with each bite.
Next slice open dried dates and fill with the above ingredients.
Or alternatively you can roll into balls the coconut filling.
Now melt some high quality dark chocolate on a slow heat low temperature.
Dip the balls or filled dates into the melted chocolate and sprinkle or roll in coconut flakes.
Let them set, store in a refrigerator and enjoy these delicious treats.
Goes great with Indian Chai.
